It’s another Monday and if anyone else is feeling like I am feeling today then bless your heart. This weekend was a little event called Mullet Toss that happens annually at Florabama on the Florida Alabama line on the beach and It was a pure mad house. If you’re wondering why its called a mullet toss it has nothing to do with actual mullets, you know business in the front party in the back, though there are plenty of those there too. The event is a contest where people sign up and toss a Mullet, the fish, and see who throws it the farthest. Yes it is silly and yes it is just an excuse to throw a big party, so what, don’t judge us. It’s a time for everyone to let out their inner redneck, even though for some that doesn’t require much effort. I think I pulled it off quite well.
It was all in good fun and I had a blast. I was worried I was going to fall off the healthy eating bus with fried food frozen drinks galore surrounding me but all was well!! So two thumbs up for me.
I even managed to get some work outs in. I am following a squat challenge which requires you to do more and more squats each day and with that and walking on the sand carrying beach bags and coolers and tents my legs were definitely feeling the burn.
But today my body was just not ready to go back to real life. My alarm didn’t go off i was late to work and I had a healthy breakfast of sea salt popcorn that I had on hand and I didn’t pack a lunch. Soooo happy Monday to me. It’s back to reality so I have to pull it together. It can only get better from here!
Well hello there, we made it through another Monday that’s something alone to be excited about!
I wanted to share my creation for dinner tonight.
Eggplant lasagna and broccoli. A new Pinterest recipe. I don’t know what my belly would do without it.
I have been leaning towards a more paleo diet lately. Not following it to strict because I mean come on…no beans or any kind of grains!? This girl is a fan of beans and a personal oatmeal fanatic. I am more so just trying to eat all natural foods because I like to know what I’m putting into my body instead of some chemical I can’t read and I have no idea what the hell it is.
As far as my work outs go I am on week 10 of the Jamie Eason live fit program. I am almost done! Whoop whoop! I don’t know what I am going to do once I finish I think I may go with the new Les Mills beach body combat work out because I fell in love with his body pump. We shall see! Anywho, I am off to get my run on and then settle in and watch my shows. Hope everyone’s having a good week!
I wanted to share a few of my meals I have been whipping up lately. I’ve been doing so good with eating healthy and cooking all my meals.
First off, I have to show my new find. How I have not heard about this stuff until now I have no idea because I do believe it may be the best thing of ever. I’m on a mission to try crazy concoctions with every flavor.
I may seriously be In love.
Another first for me was spaghetti squash! Oh lord it was so good now I can have pasta back in my life without eating a million calories. The meal consisted of spaghetti squash, home made pasta sauce with veggies thrown in and some venison. On the side there you will see some buffalo cauliflower. And it was all way too good.
For this morning I ate this new recipe I found on Pinterest. The holy grail of recipes.
Hawaiian over night oats. Just some oats thrown in with almond milk (may be better with coconut milk I will need to try next time) and some pineapple and coconut shreds. Perfecto!
For my work out today I did biceps/ back and me and my friend went to a local park and did sprints as ran. I think I almost died. Since I haven’t been playing soccer anymore I forget how much I demise sprints but boyyyy do they work. Now I’m off to get my rest in after all that. Hasta mañana!
So I had to post this because as a peanut butter and self proclaimed sweets addict when I saw this I was so excited to try it out.
Let me explain to you why. This recipe is for HEALTHY peanut butter cups. I know I know it’s amazing. A fellow blogger I follow Healthy Valerie posted them and I figured I’d share the wealth with you guys. Check it:
- 2 scoops chocolate protein powder
- 2 tbsp pure unsweetened cocoa powder
- 3-4 packets Stevia
- 8 oz water
- All natural peanut butter or any other nut butter of your choice
1. Blend all the ingredients for the chocolate. Remove from blender and let it sits for 5 min in a medium bowl.
2. Drop tablespoonfuls of chocolate mixture into paper-lined muffin cups. Top each with a tablespoon of natural peanut butter ; top with another tablespoonful of chocolate mixture.
3. Freeze for an hour. Take one or two out of the freezer, let them sit for 5-10 min.
So go make some right now! Do it!
I have not had much time to post but today I felt the need. Yesterday was such a tragedy and I cannot fathom the people who would/could do such things. I pray for all of those who were there and the family and friends of those who lost their lives.
I saw this quote and it encouraged me to make sure I got a good run in. Now when I run I think of this and how easily it can all be taken away.
Well guys time to fill you in on my weekend! I went to my beach house this past weekend to get away and enjoy our first spring weather weekend!
Friday I took my rest day because I was exhausted! Also, the idea of being at the beach sounded way better than being at the gym. ohhh wellll
I think I more than made up for it on Saturday! I decided to check out one of the trails at Gulf Shores State park and decided to run a 5k but found myself catching a second wind and ended up running 6 miles in under an hour! Wahoo never thought I would catch myself doing that.
I was so proud of myself and not even tired! I think the 10 miler sounds like it will be a breeze now. I think the pretty view may have helped a little.
I ate healthy all weekend too and got a newfound love for sweet potatoe. I used to not be a fan but I figured I would give it another go and I don’t know what I was thinking! It’s delicious an with cinnamon on top Nom, Nom, Nom.
Sunday I went for another run but only made it a little less than two because I was feeling a little queezy I don’t think my food ha settled yet. So note to self don’t run on a full tummy.
So far this week I am slacking slightly in the working out and eating healthy deportment because last night I ate Mexican( i.e. margaritas) and today I had fried chicken! But my other meals have been clean and tomorrow I’m back on track.
Also, to encourage me to get my fitness on my first Stride box came in!
It’s only a sample box because I ordered mine too late but It still included some awesome goodies: A Picky Bar (Gluten & Dairy free), Gu Energy Gel(in peanut butter my favorite) and a Nuun drink tab. Can’t wait to try them out!
If you lift weights you probably know exactly what day I am talking about…yesterday was LEG DAY.
This explains my feelings to a T
I am definitely feeling it today. Whoo. I have been trying to focus more on upping my heavy lifting and man it is killer! I can tell it is making a difference though and I love the feeling of getting stronger. Plus, it doesn’t hurt being able to show off every once in a while.
I am still following Jamie Eason’s Live Fit program. I’m on week 7, whoop whoop! Only a little more than a month left then I’m done!

Now I must say I can squat all day long but I do believe lunges may be the death of me but I got to work hard for that booty…which is pretty much non-existent right now but were working on that!

Egg white,spinach, lean ground turkey with veggie pepper jack cheese and killer chia toast with blackberry preserve. Yum! Be jealous.
